Some of you will know that Walter is a passionate hunter and hunts the meat for our game dishes himself. It couldn't be more regional, gentle and traceable. You can look forward to seasonal and regional specialities, because we also source ingredients that we don't produce, hunt or collect ourselves from friends in the neighbourhood and surrounding area:

  • Yoghurt from the Kohler farm in Au

  • Meat and sausage from the Feuerstein butcher's shop

  • Cheese from alpine dairies in the region via the ‘Kulinarium Metzler’ in Mellau

  • Egger beer from the Egger brewery in Egg

  • Wine from the Bregenzer wine merchant and the Hornstein winery

  • Schnapps from the schnapps distillery Prinz Hörbranz

  • Coffee from Amann Kaffee in Schwarzenberg
